Sustainable Means Never Having to Say You're Saucy

The thing I love most about the whole locovore, sustainable food movement is this: It gives you the AOK to eat just about anything without guilt. Butter, bacon, cream...you name it. If it comes from a reputable source, eating it makes you a do-gooder.

Needing a little feather in my cap before Santa hits my hood, I went to dinner at Fish and Farm, the latest on the SF locovore list. Sure enough all the usual suspects were represented on the menu. In fact, there was a thick juicy pork chop served with brussels sprouts cooked in bacon...Bingo!

Sure it was good (pig on pig how can you go wrong , right?), but aside form that combo, it really wasn't all that. Instead of relying on the fresh flavors of these local and "artisan" foods, the chef got a little saucy. Sure there's the environmental benefit of going local, but it's shameful to treat superior food like all the rest. Sustainable ingredients need to shine on their own in order to sustain my attention. Simply put, it's the right thing to do.
